Sometimes we can't get into a show on our first try but on a second try the experience turns out to be a lot better. Basically that was the case here, it also happened for me regarding Frieren which I found quite mediocre and overrated on my first watch and gave it a 6/10 rating while on a rewatch I liked the show a lot more & increased my score to a 9/10.

Tbh I think it just should've stuck to the webcomic's story. The changes the manga's been making feel really overcomplicated/convoluted, and it looks like most of it's being improvised on the spot
My 1/10 score for Sakamoto Days mainly comes down to three factors. Firstly, I rank series comparatively and usually tend to rank series the second that I've fully caught-up with them. When compared to, say, all 39 episodes of Diamond is Unbreakable, a single episode of a show isn't usually gonna score above a 1 or a 2 unless it's, like, a REALLY good episode. It's the same reason that I scored Ya Boy Kongming! a 1/10 after episode 1's dub released, and my score gradually increased as I kept watching every week. I suspect the same thing may happen for Sakamoto Days, but it's still a bit too early for me to tell. :P
Secondly, I tend to be quite a harsh critic, or so I've been told. Even series I like can struggle to score above a 6/10, so a single episode of a series I don't really care about one way or the other is quite unlikely to score highly anyway, even if I hadn't seen so much other shows to compare it to. I actually thought I was quite generous not tagging Sakamoto Days "0/10" on my list, LMAO. XD
Lastly, and I know this is incredibly subjective and very "YMMV", but I just didn't find the first episode of Sakamoto Days funny, like, whatsoever. I rolled my eyes when they revealed that Shin was clairvoyant because I instantly expected Sakamoto Days to butcher the execution in much the same way that SPYxFAMILY did (IMO), which is to say that despite being able to read minds, the narrative uses this for neither the plot nor the jokes. Like, when Sakamoto hands him the apron at the end of episode 1, why would a mind-reader even need to question its purpose? Surely he'd instantly know why Sakamoto gave him the apron, and would either agree to work at his shop, or would make some funny quip about it? Very nitpicky, I'm aware, but in-general I think that mind-reading characters in comedy series are almost always horribly written, and this one doesn't look like it'll be the exception. Of course, it is still very early days, I'm more than willing to give Sakamoto Days a chance to win me over. (If I wasn't, I would've dropped it already, LOL.) :3

I guess I tend to enjoy morally-dubious/outright evil characters, so long as I find they're written well. Funnily enough, if I find a character to be like that when it's clear that moral-ambiguity wasn't the writer's intention, I usually tend to hate them a lot more, lol. (Such-as basically all of the "protagonists" from Chainsaw Man, Leone Abbacchio or Katsuki Bakugo, for example.)
There are only, like, 3 anime characters I can think of who I dislike for reasons that the author clearly intended me to dislike them for. There's Kotaro from My Hero Academia, the bully from JoJo part 9 and Oleana from Pokémon (granted, most of my hatred of Oleana comes down to that I find her and the rest of her teammates to be really boring, lol).
Plus his dialogue consistently makes me laugh, so there's that, I suppose. Have you gotten to the chapter where he rants about spoiled milk, yet? I swear, that's gotta be, like, top 3 funniest JoJo moments, IMO
